Everything pumpkin

It is that season again!  October is (unofficially) pumpkin month.  Here are some things, besides pie and bread, that you can make with the surplus of pumpkin.  Try something new!

This favorite squash is packed with Vitamin A, Vitamin C, Vitamin E (Alpha Tocopherol), Riboflavin, Potassium, Copper, Manganese and beta-carotene.  Also good source of Thiamin, Niacin, Vitamin B6, Folate, Pantothenic Acid, Iron, Magnesium and Phosphorus.  It is also mildly anti-inflammatory.

Hint for parents:  Don’t say they’re pumpkin cookies/pancakes/etc (unless your kids are super excited about trying new things).  Tell them they are colored orange for Halloween/Autumn!  Much more fun to those picky eaters!
