Oven-baked Polenta

It is so easy!  I don’t make polenta often, as it takes time and patience.  I don’t like the way it spits up at me and takes constant attention.  This recipe takes away all my excuses to not make it.  I foresee a lot of polenta in my future!

Preheat oven to 400.  In a covered oven-proof pot, combine 3/4 cup polenta (course cornmeal), 3 cups water, salt and pepper.  Bake for 30 minutes, stirring half way through.  Add 1/4 cup milk and some grated parmesan cheese and enjoy!
