Valentine’s Day cookies

I had the idea of making heart shaped cookies sandwiched with icing for Valentine’s Day, and thought it would be fun to incorporate the Cooking Club into the project.  So yesterday, all day, while the kids were away at school, I baked off 12 dozen sugar cookie cut-outs.  I wanted to have enough for the club members to take a couple home and to give away to my kid’s classmates.  That added up to alot!  Especially since the number would be cut in half, when sandwiched.

Not that I am complaining; I actually really enjoy those sort of days.  I had a mission and was focused.  After the first few batches I really got it down, rolling and cutting efficiently, with very little dough leftover per roll.

After all the cookies were baked off, I made some pink buttercream frosting and packed up to assemble them with the kids at school.

The kids busted through assembly, tasting as they went.  They each took home two and ate one.  The rest we took home and bagged up for passing out today for Valentine’s Day.  There were a few leftover, which the kids will give to their old teachers, office staff, and principal.
