Cynthia’s Parsley Pumpkin Seed Garnish

I love this recipe for Cynthia’s Parsley Pumpkin Seed Garnish!  We made it in our class and I had to make it as soon as I got home!  If you do not know Cynthia, check her out below.  She was my Whole Foods cooking class instructor at Bastyr University, and my favorite teacher.  She also has written a book, has a website full of amusing how-to’s video and recipes, and periodically can be found with an article in a natural health magazine.  She is fun to watch, has a great sense of humor and has passion for what she does.

Very tasty way to get more greens in your diet.
Parsley Pumpkin Seed Garnish

This will store for a couple weeks in the frig.  You can plop it on Brown Rice, Quinoa, Soba Noodles, Polenta, Rosemary Red Soup, Fried Tofu.  The applications are as endless as an iphone’s.    Read why Dr. Oz says eating greens will make you smarter and review the top ten reasons to cook at home.  It’s all on cookus interruptus where we want to hear about what you’re cooking up for  your family.
