Havest of the month: potatoes!!

Harvest of the month is here!!  This month produce item was potatoes.  The box c0ntained an assortment of small yellow, baby red, purple and russet potatoes. I used only the small yellow, purple, and red, as they have a much smoother consistency and are not as starchy.

We pulled out the cooking cart, diced the potatoes, and roasted them with olive oil, salt and pepper.  With the small convection oven working at full capacity, the two pans of potatoes took almost an hour.  The kids kept peeking their heads around the corner to see if they were done.  When done and cooled enough to eat, they dug in, have seconds, thirds, and wanting fourths.
