Super Fresh & Easy apricot chicken fingers


Last night, I was invited to an event, hosted by Fresh & Easy neighborhood markets.  The invite mentioned it being a hands-on cooking class, and I had to read no further!  I called my husband directly, asking if he could watch the kids, so I could attend.

I arrived a few minutes early and was greeted warmly by Sally, one of the event organizers.  Not a minute later, a wine steward approached me, offering Prosecco to start.  I sipped my wine and browsed the room.  There were appetizers along both walls, pita chips with artichoke dip, crudites with roasted pepper dip, assorted salumi and cheeses.  This was my kind of event!


Some other attendees arrived, everyone being bloggers, so we had commonalities to talk about.  I struck up a conversation with Ana, of Spanglish Baby, and Silvia, of Mama Latina Tips.  We chatted about having biligual kids, blogging, and ultimately, food.  Attention was brought to the front of the room, and the event begun.  We were to make homemade pizzas, apricot chicken fingers, salmon with peanut sauce, and steak fajitas.  Breaking up into groups, each assigned to a different dish; we made the chicken.


I was amazed how easy it was!  And I would have never thought to make it this way.  We combined a jar of apricot jam with whole-grain mustard and sweet hot mustard.  Toss the chicken tenders into the sauce, stir to combine, and dip in bread crumbs.  We then panned them up, baked at 350 for about 12 minutes, and they were done!  We reserved a little extra sauce for dipping and they were delicious!  Perfect for the kids-not too tangy, not too sweet.  And perfect for the parents-quick, easy, and healthy too.  I could get creative and try other combinations of sauces, maybe cherry or raspberry jam, and other coatings, maybe panko or cracker crumbs.  YUM!

The whole event was alot of fun.  Chatting with other moms, talking about, preparing and sampling foods, all the while, having your glass filled.   And ending the evening with a desert sampler and bag of goodies to take home.  To top off a perfect evening, I even won the raffle drawing for a $50 gift card!

    Hi Melissa!
    I had a great time meeting you at this event.

    I actually made the chicken fingers yesterday, but substituted panko flakes for the breadcrumbs and they were a total hit with my daughter and my husband!

    Hey Melissa
    Looks like you were in your element finding this opprtunity to meet other foodies. Looks like some great recipes and a lot of fun. Looking forward to August and cooking with you, etc. Maybe I’ll make my blackberry and chocolate pie again- make it a August tradition.
    It’s almost fair time with those scones and lots of old fashioned fun. Looking forward to spending time with you.
