Eat at least three different colored vegetables a day. Each vegetable has it’s own nutritional profile and different colors offer a variety of antioxidants. “Eating a rainbow” ensures that your body is getting a good balance of nutrients. Try a spinach salad with red bell peppers, carrots, and some nuts. Or how about try roasting a few different seasonal veggies in the oven with a dash of olive oil and salt/pepper.
