Teacher Appreciation Lunch

This week is teacher appreciation week at my kid’s school. To honor and thank their teachers, I like to provide them with a homemade lunch for a day.

On Monday, I presented my daughter’s teacher with a lunch of:

Israeli couscous salad with sauteed zucchini, red bell peppers, and mushrooms

A lovely green salad with olives, tomatoes, cucumbers, avocado, and freshly grated Parmigiano Reggiano.

For dessert, some fresh cut mango.
