Making Cole Slaw With Kids

Inspired by the Harvest of the Month cabbages that my son’s class received yesterday, I decided to make cole slaw with the kids.

I started with some freshly picked lemons from our school garden, for the dressing….


And then added some fennel bulbs, that have taken over a couple beds in the garden….

Add some green and purple cabbage….


roughly chopped cabbage…


add the fennel fronds…


and purple cabbage for a beautiful color contrast…


and enjoy!  These kids have been enjoying my culinary creations since first grade and graciously gobble up every bit, always asking for more.  Great kids! Great eaters!
